Mushroom “Scallops”

Cook time: 10-12 minutes About 2 Servings

Ingredients:

2-3 Large Trumpet Mushrooms (using only the stem)

2 Tablespoons olive Oil

2 clove of fresh garlic, minced

1Tablespoon soy sauce or tamari

½ Cup vegetable broth (or white wine)

Directions:

Slice mushrooms stems into 1-to 1½- inch thick rounds. These are the scallops.

Use the tip of a knife to score the tops and bottoms with a shallow crosshatch

Heat olive oil in a skillet over medium-high heat

Sear Mushrooms flat-side down for 3-4 minutes per side until golden brown

Add Butter, garlic, and soy sauce. Pour in broth (or wine) and let simmer 2-3 minutes, spooning liquid over scallops to baste them.

Optional: finish with a squeeze of lemon or sprinkle of herbs.

2 Tablespoons butter(vegan butter can be a substitute)
